Stuffed Potatoes from Leftovers

I just made couple of days ago a Hungarian dish which call Layered Potatoes. I had some hard boiled eggs, ham and potatoes left and decided to do something with it.

So I had this food in my mind, mix almost everything together and let see what will happen. I call this dish Stuffed Potatoes from Leftovers.

Leftovers:

3 whole, cooked potatoes with skin,
3 hard boiled eggs,
ham,
salt,
black pepper,
butter,
grated cheese,
spring onion,
sour cream.

First, I had three whole potatoes with skin on it cooked in a salty water. I cut them in half and took out the middle and placed the potatoes in a glass dish. If you don't have pre-cooked potatoes just put the potatoes (The potatoes should be the same size.) in a big saucepan add water a bit of salt and start cooking. From the boiling point you need another half hour but you can check with a fork or a knife, if it's go in easily than is done. It have to bee cooked, but not too cooked.

 

Meanwhile, I took the three eggs, without the shells, put them in a blender together with ham and the potatoes, teaspoon of butter, salt and black pepper. Blend them together, but not for creamy fillings. You can add some spring onion to it.


I filled the potatoes with this mixture and put some grated cheese on the top. ( Sorry I forget to take a picture, I was so hungry :-) )
I put them in the oven and baked them about 20 minutes on 200 C until the cheese get a bit golden.
Served with sour cream and spring onion on the top.


Before we ate all of it, I realised I did not took a picture. :-) This is the last one before everything disappeared from the plate.
