Home made Cranberry Preserves

At home, in Hungary we made every year nice home made preserves, with little added sugar, so you can taste the real fruit taste and the fruit bits. My favorite is apricot preserve, my mother made the best one, which is really tasty with home made crepes. Hhhmmm.....
Now I have a new one on my preserve list, Cranberry preserve. I already liked cranberry juice, but this one, with fresh bread is almost heaven.
Couple of weeks ago I bought some cranberries at my local grocery shop to use for breakfast in porridge and I realized it was too much for me. So I looked up, searched the Internet and find some cranberry jam recipe, but I wasn't happy whit them, so I changed some things. I did some small portions till the final version, which is a big one. Here is the final one, after buying more cranberries, I hope you will like it. Worth a try!

600g cranberries
2 dl orange juice with bits
60 - 80 g sugar ( you can use more, how sweet are you :))
2 tsp cinnamon
1 sauce pan
7 dl glass jar

First I sorted them, because some of them was too soft, I used the nice, hard ones. After I washed them and put every one of them in a sauce pan. I added everything to it.



And now the nice thing is coming, cooking and the lovely smell. Already hungry :-)
After a while you can hear the cranberries start popping and being soft, now you start stirring them to not to burn it down. It doesn't need too much time to have soft cranberries and be ready to smash them, to look more like a preserve. Like this.


When you got so kind of texture you can use the wooden spoon or a potatoes smash to make more even the preserve. In the meantime you can clean a glass jar, with really hot water and a bit of white vinegar. We do this all the time, because the vinegar an antibacterial liquid. When it is done you will have a nice warm jar and you can put the preserve in it.


As you can see I used a 7 dl glass jar, and when the preserve were in it I put some sugar on the top. No other preservatives, just real things. I put the lid on it and made a "bed" for this jar. This "bed" made out of old stuff, like towels, throws. It keeps the heat in but after some days - like three or four - it will be cold. We use this technic for I don't know how long. Here is the "bed". It looks funny, but it is nice for every preserve and home made compote.



After four days you are ready for the lovely cranberry preserve. Take a slice of fresh bread, a bit of butter and lots of cranberry preserve. ENJOY!
