Roasted vegetables and bacon

We have always lots of vegetable in our fridge, I like them when they are crispy and fresh. Not like my fiancé. :-)
I like to try new things when I'm cooking, sometimes I do two different meal for us. You can imagine who eats the healthiest one.
So, here is one of the healthiest option for dinner.
You can use any kind of vegetables.

Everybody knows asparagus great with bacon.
So I used the classic version with a twist.
Always these twist...

1 sweet potato, sliced
1 cup Brussels sprout
9 asparagus
3 slice of bacon
1 tbsp rapeseed oil
black pepper


Wrap tree asparagus with one bacon, put in a glass dish.
Cut the sweet potato like the French fries and add the Brussels sprouts. I did not had enough Brussels sprout, just only four. :-(
Add 1 tbsp rapeseed oil, or any oil you like, some freshly grind black pepper.
Mix the together and put into the oven.
Bake for 20-30 minutes at 200 C.

This portion enough for one person, for more people, use as much as you like.
