Healthy Cake

This is a healthy version of an easy sponge cake, without white flour and white sugar.

Ingredients:

5 large eggs
4 tablespoon agave syrup
3 tablespoon sesame flour
3 tablespoon oats flour
1/2 teaspoon baking powder
1 teaspoon orange blossom water
2 tablespoon of dried fruit or any fresh fruit

Separate the egg white in a big bowl add the agave syrup and the orange blossom water, whisk until is hard.
On this picture the egg white is half way done.


Add the egg yolks and whisk together, at that point it will be a bit liquid. In a smaller bowl add together the dry ingredients and spoon by spoon add to the egg white. 
Use a glass dish, butter it and add a bit of sesame flour too.
Pour the mix into the dish, sprinkle with dried or fresh fruit.


Put into the oven, and bake at around 160-180 Celsius until nice brown, but you can check with a toothpick. If it is still sticky leave it for couple of minutes.
Cool in a dish, when it is almost cold slice it.
You can put same home made preserve on the top.


I couldn't wait and it was still warm when I sliced the cake. :-))
I spread the top with some home made plum preserve.
